Chef Winse Chan’s 8 Treasures Tea 八宝茶

Winse Chan is a rising chef from Scotland, a food enthusiast and soon to be author of a cookbook about classic and authentic Chinese recipes, passed down from generations, inherited from the women who have influenced her cooking.

She is currently working with Nee Hao Magazine to bring you a series of exclusive mouth watering recipes for you to try cooking at home.

The Eight Treasures Tea

This herbal tea is a healthy and pleasing drink with fruity taste. It can be drunk anytime throughout the day in all seasons. This famous tea originates from Yunnan Province in China. Emperors used to have it for its health properties. They believed the synergy of the eight ingredients used will provide them with longevity. Some of the beneficial properties includes detoxifying, cleansing, heat relieving and anti-oxidation.

Cooking Time: 10 minutes

Ingredients

2 litres boiling water

100 grams rock sugar

50 grams dried chrysanthemum flowers

10 mini rose buds

8 dried Longans

6 dried red dates

2 tablespoons Jasmine green tea leaves

1 tablespoon Gozi berries

Method

1. Bring a pot of boiling water to a low heat.  Add rock sugar into water, stir to dissolve rock fragments.

2. Wash all the dried ingredients under cold running water except for the tea leaves. Add all the ingredients into pot. Partially cover with lid, boil for 10 minutes.

3. Cover with lid, rest for 15 minutes.

4. To serve hot, ladle into cups and serve. To serve at room temperature, chill for 30-40 minutes before pouring into a glass jug. Serve.
